Rare even in Japan is the Daidai citrus fruit. The Daidai is a small orange, fruit of a tree from the bitter orange family. Tastefully, its bitter, acidic and powerful taste is close to bergamot, and is perfect for making condiments, sorbets and marmalades. Its also  a secret weapon to create ceviche and epic dressings.

Daidai name, which originally means several generations, comes from the wild fact that the fruit stays on the tree for several years if it is not picked. The fruit turns green again in the spring.
The Daidai is harvested from November to January.in Japan
