Tonburi is a type of edible seed, sometimes called "land caviar," "field caviar" or "mountain caviar." Tonburi is the dried seed of the summer cypress, Kochia Scoparia, a speciality of Akita prefecture in Japan.

Serving Suggestions: On it's own, Tonburi has a almost broccoli flavor. But it's the pop in the mouth feel that you get when eating that is the star. Can be flavored with ginger, soy or togarashi for an exotic garnishment.
